How do you get the best olive oil?

What is the best olive oil? What factors have to be present for you to be able to say that you have before you the best olive oil?  In this post, we’re going to  go over some of these factors and we’ll define the characteristics of our olive oils.  At Masía El Altet, we market Masía El Altet High End, Masía El Altet Special Selection, Masía El Altet Premium and Masía El Altet High Quality.

1.      The surroundings

The land and the characteristics of the soil.  Masía El Altet’s olives grow in the Polop Valley, in the interior of the north of the province of Alicante. Clay soil at an altitude of more than 800 metres.  And in between the  two natural jewels which are the Font Roja Park and the Sierra de Mariola Park.  Thirty kilometres as the crow flies from the Mediterranean. 2.      The human factor

The experience of the people who work the land and the knowledge of new food technologies  at the Masía El Altet oil mill.   Knowing exactly when each and every olive is ripe – because not all olives ripen at the same time – and their quick and meticulous transporting to our installations play their part in obtaining this juice.  In short, the care and attention with which every action is carried out to obtain a product which can be labelled as the best olive oil.

3.       Traditional methods and maximum innovation

The olives are picked by hand but the extra virgin olive oil is produced using the best techniques of cold pressing and bottling, meaning that each bottle has been produced with the best technology available.

Now it’s time to present one by one the extra virgin olive oils produced at Masía El Altet.

1.      Masía El Altet High Quality

This is the first extra virgin olive oil to be produced at Masía El Altet.  The varieties used are Picual (60%) and Arbequina (20%).  The other 40% is made up of local varieties: Alfafarenca, Blanqueta and Genovesa.

We have before us a complex and intense oil, with slightly piquant  bitter tones.  The degree of ripeness of the olive is ‘pre-envero ‘, which is before the olive starts to change colour,  meaning that we are at the moment when the olive has the greatest aroma and flavour.

It is an extra virgin olive oil which contains a high quantity of polyphenols and antioxidants.

It’s perfect for combining with meat and white fish.  You will also note its fantastic flavour on your  green salads, mild cheeses and pasta.

2.      Masía El Altet Premium

This is Masía El Altet’s  second creation70% of the olives used in its production are local varieties.  Here, we’re talking about Changlot Real, Alfafarenca, Genovesa and Blanqueta. The remaining 30 % is Picual.

This olive oil has a  full flavour with slightly piquant  bitter tones.  Like the previous one, the level of ripeness of the  olive corresponds to before the change in colour.  Its corresponding polyphenols and antioxidants are also present.  It is perfect for meat and white fish.  Also for salads, mild cheeses and all types of vegetables.

3.      Masía El Altet Special Selection

Here we have an extra virgin olive oil produced from one single variety, Changlot Real, to be more precise.  This means that it also  has an intense full flavour with piquant  bitter tones.  The degree of ripeness of this olive is also before it begins to change colour.

Like its companions, it is a pleasure when you note its aroma and the  polyphenols and antioxidants, properties beneficial for your health, are also present.

In this case, the extra virgin olive oil combines perfectly with all types of red meat and fish.  It will obviously also add that special touch to your salads.

4.      Masía El Altet High End

The final extra virgin olive oil which we would like to present, High End, is made from 100% Picual olives. Its piquant bitter tones are similar to those of  the three previously presented.  The moment before the olives start to change colour  is again an indicator of their degree of ripeness, meaning that you’re going to enjoy a great aroma and flavour.  This extra virgin olive oil  can be combined with meat and red fish.

In conclusion

Producing the best extra virgin olive oil is something which has to be taken very seriously and in which many factors have to be taken into consideration.  It is a combination in which the area and the climate play a major role.  Masía El Altet’s olive groves are to be found at an altitude of 800 m, between two natural parks and very little distance from the Mediterranean Sea.

Due to these circumstances, it is a unique and easily-recognised extra virgin olive oil. To these natural factors, you have to add the experience of a team which has known how to make traditional techniques work hand in hand with the best food technology available.
